Hi, assalamualaikum semua. Hari ni saya nak share resepi nasi goreng kampung ala kedai punya style. Dalam resepi ini saya akan share dengan korang teknik-teknik untuk masak nasi goreng agar nasi tu berderai dan tak melekit.Caranya sangat simple dan senang. Untuk resepi kali ni, saya menggunakan Rinnai Flexi Hob . Resepi :
Bahan tumis (ditumbuk) :
- 3 - 4 biji bawang merah
- 3 ulas bawang putih
- 1 cm belacan
- 6 biji cili api hijau thai
- 3 sudu makan ikan bilis
Bahan lain :
- 2 - 3 cawan nasi semalam (penting supaya nasi tak lembik)
- sayur kangkung
- dada ayam yang dipotong kecil dan digoreng terlebih dahulu
- ikan bilis yang digoreng rangup
- 1 sudu teh garam
TIPS NASI GORENG SEDAP :
1. Gunakan nasi yang sudah dimasak semalaman. Kalau nasi baru dimasak, nasi agak lembik jd bila digoreng agak basah dan kurang sedap.
2. Gunakan beras biasa, elakkan pakai beras wangi.
3. Goreng dulu lauk pauk yg nak dimasukkan sebelum goreng nasi seperti udang, sotong, ayam dll. Ini untuk mengelakkan air dari brg2 basah ni keluar dan buat nasi jd berair dan basah.
4. Setiap kami nak tumis atau kacau bahan2, gunakan api besar supaya sbb haba panas tu yg membuatkan nasi makin sedap. Masa nak masukkan bahan2 dalam kuali, slowkan api utk elakkan hangit. Masa nak kacau besarkan api balik.Ulang2 sampai nasi dah masak.

Recipe:
Stir -frying ingredients (pounded):
- 3 - 4 shallots
- 3 cloves of garlic
- 1 cm shrimp paste
- 6 Thai green bird eye chillies
- 3 tablespoons anchovies
Other ingredients:
- 2 - 3 cups leftover (overnight) cooked rice
- water spinach
- chicken breast cut into small pieces and fried first
- Crispy fried anchovies
- 1 teaspoon of salt
TIPS FOR A DELICIOUS FRIED RICE:
1. Use rice that has been cooked overnight. If the rice is freshly cooked, the rice will be a bit soft and wet when fried, resulting in soggy fried rice.
2. Use plain rice, avoid using fragrant rice.
3. Stir-Fry the side dishes you want to include before frying the rice such as shrimp, squid, chicken etc. This is to prevent the water from the wet ingredients out and make the rice watery and wet.
4. Each time we want to stir -fry or stir the ingredients, use a large flame because the heat makes the rice more delicious. But lower the flame while putting in ingredients to prevent from burning.When it's time to stir, increase the heat again. Repeat the steps until the rice is cooked.
