Classic Sweet Potato Casserole
6 large sweet potatoes, peeled and cut into chunks
1 cup white sugar
½ cup brown sugar
2 tablespoons ground cinnamon
1 tablespoon butter, softened
miniature marshmallows, or as needed
Directions
Step 1
Place sweet potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
Step 2
Preheat oven to 375 degrees F (190 degrees C). Grease a deep casserole dish with butter.
Step 3
Mash potatoes with a potato masher in a bowl until no large lumps remain. Stir white sugar, brown sugar, cinnamon, and butter into the mashed sweet potatoes; transfer to prepared casserole dish. Cover sweet potato mixture with a layer of miniature marshmallows.
Step 4
Bake in preheated oven until marshmallows are browned, about 30 minutes.
Quick & easy Cheesy Roaster Sweet Potatoes

4 small sweet potatoes, halved lengthwise
2 tablespoons olive oil
kosher salt and black pepper
3 ounces fontina, grated (¾ cup)
1 ½ ounces Parmesan, grated (⅓ cup)
Directions
Step 1
Heat oven to 425°F. Rub the potatoes with the oil and season with ¼ teaspoon each salt and pepper. Bake, cut-side down, on a rimmed baking sheet, until golden brown and tender, 18 to 22 minutes.
Step 2
Turn oven to broil. Combine the fontina and Parmesan in a small bowl. Turn the potatoes cut-side up and top with the cheese mixture, dividing evenly. Broil until the cheese is melted and golden brown, 2 to 3 minutes. Sprinkle with more pepper, if desired. Serve warm.
Showstopper Meringue-topped Sweet Potato Casserole

4 eggs, separated
4 pounds sweet potatoes, peeled and cut into quarters
½ cup packed brown sugar
½ cup half-and-half or light cream
¼ cup butter, melted
½ teaspoon finely shredded orange peel
2 tablespoons orange juice
½ teaspoon salt
1 teaspoon vanilla
½ teaspoon cream of tartar
½ cup granulated sugar
¾ cup pecan pieces, toasted
Directions
Step 1
Allow eggs to stand at room temperature for 30 minutes. Grease a 2-quart square baking dish; set aside. In a Dutch oven cook sweet potatoes, covered, in enough boiling salted water to cover for 25 to 30 minutes or until tender; drain. Return potatoes to the pan.
Step 2
Preheat oven to 350°F. Lightly mash potatoes with a potato masher. Stir in brown sugar, half-and-half, melted butter, orange peel, orange juice, and salt. Cool for 5 minutes. In a small bowl lightly beat the egg yolks with a fork. Stir the egg yolks into the sweet potato mixture. Transfer sweet potato mixture to the prepared baking dish.
Step 3
Bake, uncovered, for 15 minutes. Meanwhile, for meringue, in a large mixing bowl combine egg whites, vanilla, and cream of tartar. Beat with an electric mixer on medium speed about 1 minute or until soft peaks form (tips curl). Gradually add the granulated sugar, 1 tablespoon at a time, beating on high speed about 4 minutes more or until mixture forms stiff, glossy peaks and sugar dissolves.
Step 4
Sprinkle pecans evenly over hot potatoes. Immediately spread or pipe meringue over top, carefully sealing to edge. Bake for 15 minutes or until browned and an instant-read thermometer inserted into the meringue reads 160°F.
