Jom buat resepi coconut pandan roll! Hidangan ini memang sesuai untuk minum petang bersama keluarga.
For the dough:
1 cup milk slightly warm
1 large egg
3½ cups bread flour
3 tbsp ADELA Margarine
¼ cup sugar
½ tsp salt
1 tsp pandan extract
2 tsp yeast
For the Filling
2 tbsp ADELA Margarine (melted)
2 cups sweetened coconut flake
For the coconut cream
200g gula Melaka melted
100ml Coconut santan
170g cream cheese
100g ADELA Margarine
Pinch of salt
Method:
1. In a small bowl, mix the yeast with milk and sugar. Set aside to activate
2. In a big mixing bowl, combine flour and salt and mix well. Add the activated yeast mixture with egg, ADELA Margarine, pandan extract and mix using a dough hook mixer. Let it rest for half hour to rise.
3. In the meantime, prepare the coconut cream by mixing everything until combined. Keep chilled for later.
4. Once the dough has risen, punch it down and bring to a work surface dusted with flour. Roll the dough into a rectangle with ½ inch thickness.
5. Spread ADELA Margarine evenly onto the surface and sprinkle with the coconut flakes. Roll the dough lengthwise and cut it into 12 even pieces.
6. Place in a baking dish and let it rise for another half hour.
7. In the meantime, pre heat the oven at 180’C and once the rolls have risen, bake it for 25 minutes or until the top is golden brown. Serve with the coconut cream.
