6 Bell Pepper Recipes bursting with Goodness!
1) Smoky Bell Pepper Chili Chicken - A delicious BBQ style chili chicken recipe made with a smoky bell pepper or capsicum chili based sauce. Made using one roasting pan and a blender. It also adapts well to a closed lid style BBQ. Simple to make, and if you make this the day before, it’s even better as the sauce works like a marination. The sauce is made using red bell peppers or capsicums, they are charred black and peeled giving you a smoky flavour. Watch the video to see how to peel and smoke a bell pepper or capsicum. Make extra of these smoky bell peppers as these are delish in salads or as a condiment for many other meals. Make sure you cook the chicken long enough to get a few black burnt bits on top. They are so tasty! Serve it with a crispy fresh salad, rice or potatoes.

There is something magical that happens to bell peppers or capsicums once roasted. They become a whole new vegetable with a pleasing texture and smoky flavour. This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing chicken thighs that have been coated in cayenne pepper and smoke paprika. Mushrooms and spinach are added for a complete meal. Simply serve it with pilaf rice or even pasta.

These Italian peppers make a perfect lunch or even dinner and are ideal prepared in advance. These Italian peppers have a meat filling made from beef, Parmesan cheese, herbs and brown rice. The peppers are first roasted to soften the flesh and bring out the pepper flavours. Ensure you select even sided large peppers or capsicums when buying. Leaving the stems on gives it a more rustic appealing look, but that’s entirely optional. A serve of two halves per person is perfect but you can also serve half with a nice salad.

The chicken thighs are first coated in seasoning and smoked paprika. It's browned and mixed with three different colored bell peppers or capsicums. You could of course use what ever color you like if unavailable. The chicken thighs are slowly stewed for 30 minutes rendering them very tender. You can use fresh or dried herbs, both of these herbs also work well dried. This dish is easy to reheat in a saucepan or microwave, always add a little extra water before reheating. It freezes well and will keep sever days covered in the refrigerator.

This recipe is peppery funny enough with a berry called Sichuan pepper. It’s used a lot in China’s South West Province called oddly enough, “Sichuan or Szechwan”. It has a remarkable numbing effect on your taste buds, quite different to the spicy chili piquant we are used to. You will need to marinate them for at least one hour, I prefer overnight or even 24 hours. When coating the chicken, make sure each piece has corn-starch on it. If you find it difficult, just spread them out on a flat tray.

It's best to use a whole chicken so you get the bones for extra flavour and juicier meat, plus the carcass to make a nice stock.
