Spinach Rice With Eggs.We LOVE this Spinach Rice Casserole. This Lemon Rice With Spinach and Eggs recipe it is an ideal weekday meal that will be ready for you and your family in only 30 minutes. This spinach and rice recipe is easy to make using only a few common ingredients, really delicious and can be served as a side or main course.

Ingredients:
- 4 spring onions
- 2 tbsp olive oil
- 200 g minced meat
- 1 kg spinach
- 1/2 cup arborio rice
- 1/2 lemon
- 1 cup milk
- 1 tbsp paprika
- 1tsp salt
- 1 tbsp dill
- 6 eggs
- shredded cheese



Instructions:

In a pan heat the olive oil and add the spring onions cooking them until soft. Add the minced meat and let it cook together with the onions for 3-4 minutes mixing them together. Add the spinach and cook until all the juice from it reduces and add the rice mixing them together. Add the lemon juice. Transfer the mixture to an oven dish.

In a small bowl mix one egg with the milk and pour it over the rice. Add the paprika, salt, and dill.

Add the eggs on top and spread some cheese.
Place it in the oven and bake it for 15-20 minutes.
Serve it immediately.
