Makes 30
Macarons
300g almond flour
300g powdered sugar
110g liquefied egg whites (see below)
300g caster sugar
75g water
110g liquefied egg whites
1tsp cinnamon
1 tsp cocoa powder
300g finely crushed graham crackers
Frosting
400g dark cooking chocolate
200ml whipping cream
Marshmallow layer
400g marshmallows
Corn flour to dust
