Ingredients:
2 Potatoes
5-6 Garlic Cloves Smashed
1 tbsp Oregano
2 tbsp Olive Oil divided
1 tsp salt
10-15 Cherry Tomatoes
2 Trout Fish
Instructions:
1. Preheat oven to 425 degrees (220°C). Toss together potatoes, tomatoes, garlic, oregano, 1 tablespoon oil, and 1/2 teaspoon salt. Arrange potatoes in a baking dish, overlapping them; top with cherry tomatoes.
2. Roast until tomatoes are juicy and potatoes are tender about 15-20 minutes. Remove from oven.
3. Rub fish with 1 teaspoon olive oil, dividing evenly. Season inside and outside of fish with remaining 1/2 teaspoon salt; stuff with lemon slices. Arrange on top of potatoes, shifting tomatoes alongside. Roast until fish are cooked through, about 20 minutes; serve immediately.
