Almond White Cookie:

- 125 gr All Purpose Flour ( 1 cup )
- 50 gr Almond Flour ( 1/2 cup)
- 80 gr White Sugar ( 1/3 cup + 2 tbsp)
- 1XL Egg White, OR 2 Egg whites from 2 Small Eggs
- 110 gr very soft/melted Butter ( 1 stick )
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Almond Extract

Chocolate Oatmeal Nut Cookie:

-100 gr All Purpose Flour ( 3/4 cup )
- 30 gr Unsweetened Cocoa Powder ( 4 tbsp )
- 60 gr Oats ( 1/2 cup + 3 tbsp )
- 150 gr Brown Sugar ( 3/4 cup )
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 2 Large Egg Yolks
- 110 gr Melted Butter ( 1 stick )
- Handful of Nuts

Pat these cookies down before baking them. Bake at 180degrees celsius (350F) for 10-13 minutes.

Pistachio Cranberry Cookies

- 125 gr All Purpose Flour ( 1 cup )
- 50 gr Toasted Pistachio Flour ( 1/2 cup )
- 120 gr White Sugar ( 1/2 cup + 2 tbsp )
- 2 Egg Yolks
- 110 gr very soft/melted Butter ( 1 stick )
- 1/2 tsp Baking Powder
- 1/2 Baking Soda
- 1/2 tsp Vanilla
- 1/2 tsp Salt
- Handful of Toasted Pistachios
- Handful Dried Cranberries
