Pineapple Upside Down Cake
Ingredients

- 1 can sliced Pineapple
- 1/2 cup Brown Sugar
- 1/4 melted Butter
- 1/2 cup melted Butter for cake batter
- 1/2 cup Pineapple Juice
- 2 cups All Purpose Flour
- 2 Eggs
- 1 tsp Baking Powder
- 1/2 tsp Salt if you use unsalted Butter
- 1/2 tsp Almond Essence (optional)


Preparation Method
Step 1 : Bottom Layer preparation

- Take brown sugar in a bowl
- Add melted butter
- Whisk together for about 1 minute
- Pour this into bottom of the cake mould
- Spread mixture to entire surface of the mould
- Lay pineapple slices
- Place cherry in the centre of the pineapple
- Keep this aside


Step 2 : Cake preparation

- Take Sugar in a bowl
- Add melted butter
- Whisk or beat until creamy in texture
- Add Eggs
- Add Pineapple juice
- Add Almond essence (optional)
- Beat using whisk or electric blender
- Add All purpose flour
- Add Baking powder
- Beat one more time until batter is smooth in texture
- Pour this batter over Pineapple and spread evenly
- Preheat convection bake @180 degree
- Place cake mould on convection bake rack, so that heat will evenly spread from all the side
- Bake for 30 minutes
- Do tooth pick test to know whether cake is baked fully or not, if not put it back for another 5-10 minutes
- Remove from convection bake, let it cool down for 5-10 min before serving
