Ingrediens for 4 Smashed Pancake Burger:

200 g Ground Beef
4 Slices of Cheddar Cheese
Sriracha Hot Sauce
220g Flour
30g Sugar
1 Pck. Backing Powder
1 Pinch of Salt
2 Eggs
240ml Milk
60g melted butter
4 small pieces of butter
Maple Syrup

How to prepare the braised lamb shanks

Sieve the flower, sugar and baking powder into a bowl. Crack the eggs into a second bowl, mix well and pour in the milk. Season with a pinch of salt and add the liquid ingredients into the flower - by constantly whisking. Add the melted butter, beat the batter until smooth and let sit for approx. 10 min.

In the meantime fry the bacon on medium high heat on a crepes maker / pan / cast iron griddle / planca (everything which has an even surface). Add the meatballs and smash down with a spatula and cook for approx. 2-3 min per side.

Flip the bacon & the burgers, add the cheese on top of the burgers, top with the bacon and cook for another 2-3 min.

As soon as the burgers are finished, reduce the heat and bake the pancakes.

To finish the burgers, add some Sriracha hot sauce onto a pancake, add the burger and top with another pancake. Then place a small piece of butter on top and pour over the maple syrup!
