Banana Muffins | Kitchen Time with Neha
When I have some over ripe bananas on hand I love to just pop them in the freezer and then defrost them and make banana bread or banana muffins whenever I want to. And this is by far the most delicious banana muffins recipe I have tried. These muffins turn out so moist, fluffy and delicious. And the crust is oh so heavenly, especially if you eat them right when they are out of the oven. Make sure to give these a try for yourself. They just make the perfect snack on a rainy evening! ;)
Ingredients: (Makes 6-7 muffins)
*3/4 cup plus 2 tbsp all purpose flour

*1/4 tsp salt

*1/2 cup sugar, powdered
*1 egg, at room temperature (OR 1/4 cup curd/dahi)
*1/4 tsp vanilla extract

*2 over ripe bananas, mashed (fresh or defrosted)
*1 tbsp milk
